Southwestern Breakfast Quesadillas


Ingredients

2 tortillas, preferably whole wheat
1/2 cup green pepper, chopped
1/2 cup onion, chopped
1-2 cloves of garlic, minced
1/2 jalapeno, seeded and chopped
3 eggs, preferably organic
Pinch of cayenne pepper
Salt and pepper, to taste
Handful of cilantro, chopped
2 ounces of cheese, shredded (I used cheddar)
Olive oil
Toppings: guacamole, salsa, ect…

Directions

1. In a medium non stick pan, heat a drizzle of olive oil. Add onions, peppers, garlic, and jalapeno, stirring occasionally over medium heat.

2. In a small bowl, whisk the eggs with cayenne, salt, pepper, and a tablespoon of water.

3. Once the onion mixture is lightly browned, reduce the heat to low. Add the eggs and lightly scramble, 2-3 minutes.

4. Heat a large cast iron pan over medium heat. Place one tortilla in pan and top with the egg mixture. Sprinkle with the cheese and cilantro.

5. Top with the other tortilla and cook 2-3 minutes on each side until golden brown and the cheese is melted.

6. Slice and serve with desired toppings.

Multigrain French Toast

Those pancake houses serve the best-tasting French toast, cooked in loads of oil and smothered with butter and maple syrup. Not exactly healthy or lowfat, though. My version of French toast is delicious and healthy. Using an egg substitute saves fat, calories and excess cholesterol.


Ingredients:

4 slices multigrain bread
1 Tbsp sifted icing sugar
1/2 cup egg substitute or 2 large eggs
sliced strawberries
3 egg whites
2/3 cup lower-fat milk
1 tsp cinnamon
1 tsp pure vanilla extract

Directions:
Combine the eggs, milk, cinnamon and vanilla until mixed.
Dip each piece of bread into this mixture 1 slice at a time, on both sides, until the bread feels saturated.
Do not over-dip or the bread will fall apart.
In a large nonstick skillet sprayed with vegetable spray, cook 2 pieces at a time for about 5 minutes until each side is browned.
Serve with maple syrup and garnish with icing sugar and sliced strawberries.

Healthy Truffle Recipe

(adapted from Edible Nutrition)

Ingredients

15 pitted dates
2/3 cup cocoa powder
1 cup almonds
1 tablespoons coconut oil
1/8 cup water (to texture)
cinnamon for dusting (optional)
coconut for dusting (optional)

Directions

Mix ingredients in a food processor. Add water gradually until you reach desired texture. Pull apart about a teaspoon size of mixture and roll into a ball. Dust with cinnamon or coconut, or just eat them plain!

Simple pumpkin

Ingredients:
  • Whole small pumpkin (2 to 3 pounds)
  • Vegetable oil
  • Butter
  • Brown sugar
  • Honey

Directions:

Place a pumpkin in the oven to bake at more than 350 degrees F., until you can easily poke a knife into it. Temperature and cooking time will vary from one pumpkin to another.

When the pumpkin is done, take it out of the oven and let it sit until it has cooled enough to peel off the external skin. Then peel the skin, cut the pumpkin in quarters, and separate the orange pumpkin meat from the fibers and seeds.

Offer the seeds to family members. Some may want to eat them as is. Otherwise, remove the seeds from the fibers, then wash, dry, and roast them with a little oil and spice to taste.

Scoop out the sweet pumpkin pulp and eat it alone or with butter, brown sugar, or honey.

Serves 2-3 people.

Whole Wheat Pancakes

USE:
1 egg (or 2 egg whites) lightly beaten
1/8 cup canola oil
1 ¼ cup low-fat buttermilk or low-fat milk
1 cup whole wheat flour
1 tbs flax meal (you can use flax seeds if more convenient)
1 tsp baking soda
1/4 tsp salt
Dash cinnamon

Sweet potato pancakes

Ingredients:

1 (1 pound) sweet potato
2 cups rolled oats
2 tablespoons olive oil (optional)
1 tablespoon dark molasses (optional)
4 eggs
1 egg white
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1 cup plain yogurt

Directions:

1. Pierce the sweet potato a few times with a fork. Wrap in a paper towel and cook in the microwave until tender. Cool slightly and remove the skin.
2. Process the oats in a blender or food processor until powdery and then place in a large bowl. Break the sweet potato into chunks and place in the food processor until smooth. Transfer to the bowl with the oats and stir in the olive oil, molasses, eggs, egg white, vanilla, cinnamon and yogurt. Adjust the thickness to your liking by adding more yogurt if necessary.
3. On a hot skillet that is lightly greased, pour 1/4 cupfuls of batter onto the skillet when hot and cook until bubbles appear on the surface. Flip, and cook on the other side until browned. Enjoy!"

White Pasta Sauce

White Sauce for any kind of pasta (easy)
Ingredients:
2 tbs flour
2 tbs butter
1/4 tsp of garlic salt
1 cup milk
pinch of oregano, pepper
Parmesan or mozzarella cheese ( cut into small chunks or grated )

Directions:
In saucepan melt butter.
Stir in flour, garlic salt, oregano and dash pepper.
Then add milk and along with cheese (cheese amount varies depending on desired thickness) cook and over medium heat until thickened and bubbly.
Cook and stir 2 minutes more.

Add extras like mushrooms and bell peppers for an extra flare :-)

Barbecue Roast

3 cups chopped celery
1 cup chopped onion
1 cup ketchup
1 cup barbecue sauce
1 cup water
2 Tbl vinegar
2 Tbl worcestshire sauce
2Tbl brown sugar
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
Boneless roast (beef, pork both work great!)

Combine all all ingredients mix well, add roast. Cook on high for 6-7 hrs in slow cooker.

POT ROAST

1 packet Lipton onion soup mix (i use half a packet because it's extremely salty!)
3-5 lb pot roast
carrots
potatoes
onions
1/2 cup water

simmer on low 5-7 hrs or high for 3 hours. it looks like there isn't enough water but trust me it will work out! it's a nice thick gravy to put over the top

Scalloped Potatoes and Ham

6 Lg Russet Potatoes sliced into 1/4 inch rounds
1 Ham steak ( about 1 1/2 lbs) cut into cubes
1 can condensed cream of mushroom soup
1 soup can of water
1 cup shredded cheddar cheese
grill seasoning, to taste

~Layer Potatoes and Ham in crock pot
~Combine soup, water, cheese and seasonings in LG mixing bowl. Pour mixture over potatoes and ham.
~Cook onHIGH 3 1/2 hours until potatoes are fork-tender. Then turn the slow cooker to LOW and continue to cook 1 hour.

Crock Pot Lemon Chicken

Ingredients:
4 to 6 boneless, skinless chicken breasts
3 cans cream of chicken soup
1/2 cup milk
6 tablespoons (1/3 cup) lemon juice
Salt and pepper to taste
Cooked rice

Place chicken breasts in crock pot. In a bowl stir together soup, milk, and lemon juice. Pour over chicken. Cook on low 6 hours. Add salt and pepper, if desired.

Chicken Fiesta Soup ( It's a tortilla soup)

Ingredients

-4 boneless, skinless cooked chicken breasts, shredded
-1 can (14 1/2 ounces) stewed tomatoes, drained
-2 cans (4 ounces each) chopped green chilies
-1 can (28 ounces) enchilada sauce
-1 can (14 1/2 ounces) chicken broth
-1 cup finely chopped onion
-2 cloves of garlic, minced
-1 teaspoon ground cumin
-1 teaspoon chili powder
-3/4 teaspoon of pepper
-1 teaspoon of salt
-1/4 cup of minced fresh cilantro
-1 cup of frozen whole kernel corn
-1 yellow squash, diced
-1 zucchini, diced
-8 tostada shells, crumbled
-8 ounces shredded Cheddar cheese

1. Comine everything, except tostada shells and cheese, into the crock-pot slow cooker.

2. Cover and cook on LOW for 8 hours. To serve, fill individual bowls with soup. Garnish with crumbled tostada shells and cheese.

Cheesy Spinach Dip

Ingredients:
1 package frozen spinach - thawed and drained
1 lb velveeta cubed
4 oz low fat cream cheese cubed
1 can ro*tel diced tomatoes with green chilies - undrained
8 slices bacon - cooked and crumbled

Place in slow cooker or stove stop pan and heat, stirring occasionally until melted and blended smooth

Eggless Baby Teething Biscuits

Ingredients:
1 cup flour
1/2 cup dry infant rice cereal with bananas (or other flavored infant cereal)
1/2 cup dry plain infant rice (or other) cereal
3 tablespoons cooking oil
ice water

Directions:
Preheat oven 425F

Mix flour and cereal.
Gradually stir in oil. Mix a little ice water at a time (start with 1/4 cup) until dough begins to form a ball and pull away from the bowl.
Roll out to the thickness of a cracker on a floured surface and cut into desired shapes.
Bake on an ungreased cookie sheet 10-12 min. or until lightly brown. Cool completely.
Store in an airtight container.

Teething Biscuits

1 cup flour
1 cup baby cereal
1 cup baby juice

Preheat oven to 350*

mix everything
roll dough out
cut into cookies
bake for 20-30 minutes until hard and brown
